Instructions
- Prepare Oven & Dry Ingredients: Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper. In a large bowl, whisk together the instant oats, whole wheat flour, baking powder, ground cinnamon, and salt to evenly combine the dry components.
- Combine Wet Ingredients: In a separate bowl, whisk melted coconut oil or butter with the large egg, vanilla extract, and agave until the mixture is smooth and thoroughly blended, ensuring even sweetness and moisture.
- Mix Dough & Add Apples: Pour the wet ingredients into the dry mixture and stir until just combined to avoid overworking the dough. Gently fold in the finely diced red apple, distributing the pieces evenly throughout the cookie batter.
- Scoop & Bake: Using rounded tablespoons or a 1.5-inch scoop, drop portions of dough onto the prepared baking sheets, spacing them at least 2 inches apart to allow for spreading. Bake for 12-15 minutes, or until the cookie edges turn golden brown and the centers are set but still soft.
