Chicken and Marinade
- 4 chicken breasts
- 1 (12-oz) Lawry’s Herb & Garlic Marinade
- 2 Tbsp olive oil (for cooking chicken)
Bruschetta Topping
- 2 (14.5-oz) cans diced tomatoes with basil, oregano, and garlic (drained)
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 4 cloves garlic, minced
- 3 Tbsp chopped fresh basil
- ¼ cup grated parmesan cheese
- Salt and freshly ground black pepper, to taste
Topping
- 4 slices mozzarella cheese
Instructions
- Prepare the Bruschetta Mixture: In a large bowl, combine the drained diced tomatoes, olive oil, balsamic vinegar, minced garlic, chopped fresh basil, and grated parmesan cheese. Season with salt and black pepper to taste. Stir well to combine and set aside to allow flavors to meld.
- Marinate the Chicken: Place the chicken breasts in a bowl or dish and pour the Lawry’s Herb & Garlic Marinade over them. Cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
- Preheat and Sear the Chicken: Remove the marinated chicken from the marinade and pat dry with paper towels to ensure a good sear. Heat 2 tablespoons of olive oil in a large cast iron skillet over medium-high heat. Add chicken breasts and cook for 3 minutes on each side until golden brown.
- Bake the Chicken: Transfer the skillet with the chicken to a preheated oven (around 375°F) and bake until the internal temperature of the chicken reaches 165ºF, ensuring it is fully cooked.
- Add Cheese and Finish Baking: Place slices of mozzarella cheese on each chicken breast and return to the oven. Bake until the cheese is melted and bubbly, about 3-5 minutes.
- Top with Bruschetta Mixture: Remove the skillet from the oven and spoon the prepared tomato and basil mixture over each chicken breast. Serve immediately, garnished with additional basil if desired.
