Description

This Chicken Caesar Croissant Sandwich is a delightful twist on the classic Caesar salad, combining tender shredded chicken tossed in Caesar dressing with fresh Parmesan, parsley, and crisp romaine lettuce, all nestled inside a buttery, flaky croissant. Perfect for a quick, satisfying lunch or light dinner.

Ingredients

Scale

Chicken Salad

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Sandwich Assembly

  • 4 large croissants
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved (optional)
  • Extra Parmesan cheese for garnish (optional)

Instructions

  1. Combine Ingredients: In a large mixing bowl, combine the shredded or diced chicken with Caesar dressing.
  2. Add Cheese: Stir in the grated Parmesan cheese thoroughly.
  3. Mix Herbs and Seasoning: Sprinkle chopped fresh parsley, garlic powder, salt, and pepper into the bowl and mix until well combined.
  4. Adjust Seasoning: Taste the mixture and adjust seasoning as needed.
  5. Preheat Oven (Optional): Preheat your oven to 350°F (175°C) if you plan to toast the croissants.
  6. Prepare Croissants: Slice the croissants horizontally in half.
  7. Toast Croissants (Optional): Place the croissant halves cut side up on a baking sheet and toast in the oven for 5-7 minutes until lightly golden and warm.
  8. Cool Croissants: Remove from oven and let cool slightly before assembling.
  9. Assemble Sandwiches: On the bottom half of each croissant, add a generous scoop of the chicken salad mixture.
  10. Add Vegetables: Top with a handful of chopped romaine lettuce and, if using, sprinkle cherry tomato halves on top.
  11. Finish Sandwich: Place the top half of the croissant on the sandwich and press down gently.
  12. Serve: Optionally garnish with extra Parmesan cheese and serve immediately.

Notes

  • The oven toasting step is optional but adds a nice warmth and slight crisp to the croissants.
  • Feel free to add other sandwich toppings such as avocado slices or crispy bacon for extra flavor.
  • Use leftover cooked chicken or rotisserie chicken to save time.
  • Store any leftover chicken salad in an airtight container in the refrigerator for up to 3 days.
