Ingredients
Scale
Salad Ingredients
- 2 cups rotini or fusilli pasta
- 3 hard-boiled eggs, chopped
- 1 cucumber, diced
- 1 tomato, diced
Dressing Ingredients
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt or sour cream
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
Instructions
- Cook the Pasta: Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain the pasta and rinse it under cold water to stop cooking and cool it down. Set the pasta aside.
- Prepare the Dressing: In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and black pepper. Taste the dressing and adjust seasoning as needed.
- Assemble the Salad: In a large bowl, combine the cooked and cooled pasta with the diced cucumber, diced tomato, and chopped hard-boiled eggs. Pour the prepared dressing over the bowl and gently toss the ingredients to coat everything evenly without breaking up the eggs.
- Serve: Serve the pasta salad immediately for best freshness, or refrigerate for 15 to 30 minutes to allow the flavors to meld and the salad to chill before serving.
Notes
- For best results, cook pasta just until al dente to maintain its texture in the salad.
- You can substitute sour cream for Greek yogurt if preferred, but Greek yogurt adds a nice tang and protein boost.
- Chilling the salad enhances the flavors but it can be eaten right away if short on time.
- Feel free to add fresh herbs like dill or parsley for additional freshness.
- Salt the pasta water generously to season the pasta from within.
