  • 100ml (10cl) heavy cream
  • 1 egg
  • 1 tablespoon whole-grain mustard
  • Salt and pepper, to taste
  • Herbes de Provence, to taste


Instructions

  1. Prepare the Pastry: In a mixing bowl, combine the flour and cubed butter. Rub the butter into the flour until the mixture resembles coarse sand. Create a well in the center, gradually add the water, and mix until the dough just comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes to allow it to rest and firm up.
  2. Preheat the Oven: While the dough is chilling, preheat your oven to 180°C (350°F) to ensure it is ready for baking the tart.
  3. Roll Out the Dough: Lightly flour a clean surface and roll out the chilled dough into a circle large enough to fit your greased tart pan. Carefully transfer the rolled dough into the pan, pressing gently to fit and trimming any excess from the edges.
  4. Prepare the Filling: In a bowl, whisk together the heavy cream, egg, and whole-grain mustard until smooth. Season the mixture with salt and pepper according to your taste preferences.
