Description

A hearty and flavorful Ground Turkey Enchilada Skillet that combines lean ground turkey with black beans, corn, and a zesty red enchilada sauce. Topped with melted cheddar cheese and fresh cilantro, this one-pan dish is quick to prepare and perfect for a comforting weeknight dinner served alongside tortilla chips, rice, or warm tortillas.

Ingredients

Scale

Protein and Vegetables

  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)

Seasonings and Sauce

  • 1 tablespoon olive oil
  • 1 can (10 oz) red enchilada sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Toppings and Serving

  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 2 tablespoons chopped fresh cilantro (optional)
  • Tortilla chips, rice, or tortillas (for serving)

Instructions

  1. Sauté Onion and Garlic: Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until softened. Add minced garlic and cook for another 30 seconds to release its aroma.
  2. Cook Ground Turkey: Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 5-6 minutes.
  3. Add Beans, Corn, and Sauce: Stir in the drained black beans, corn kernels, red enchilada sauce, cumin, chili powder, salt, and black pepper. Mix thoroughly to combine all the flavors.
  4. Simmer: Reduce the heat to low and let the mixture simmer gently for 5-7 minutes. This allows the flavors to meld and the sauce to thicken slightly.
  5. Add Cheese: Evenly sprinkle the shredded cheddar cheese over the skillet. Cover with a lid and cook for 2-3 minutes until the cheese melts and becomes bubbly.
  6. Garnish: Remove from heat and garnish with chopped fresh cilantro if desired for a fresh herbaceous note.
  7. Serve: Serve the enchilada skillet hot with tortilla chips, over cooked rice, or wrapped in warm tortillas for a satisfying meal.

Notes

  • For extra spice, add a pinch of cayenne pepper or chopped jalapeño with the spices.
  • Use ground chicken or lean beef as alternatives to ground turkey.
  • Fresh corn can be substituted if preferred; just use about one cup.
  • The skillet can be prepared ahead and reheated gently on the stovetop.
  • To make it vegetarian, omit the turkey and increase beans and vegetables accordingly.
