- 1 cup chocolate chips (170g)
- 1 tbsp coconut oil (12g) (optional, for smoother chocolate coating)
Instructions
- Prepare Tray: Line a baking sheet or large platter with wax or parchment paper to prevent sticking and facilitate freezing.
- Mix Ingredients: In a large mixing bowl, combine the diced strawberries, vanilla Greek yogurt, and honey or preferred sweetener. Stir well until the mixture is evenly blended.
- Form Clusters: Using a spoon, drop dollops of the strawberry yogurt mixture onto the lined baking tray. Use the back of the spoon to spread each dollop into a small patty shape.
- Freeze Clusters: Place the tray in the freezer and freeze the clusters for at least three hours or overnight until they are fully frozen and firm.
- Melt Chocolate: Carefully melt the chocolate chips either in short bursts in the microwave or using a double boiler method on the stove. Stir in the optional coconut oil to achieve a smooth, glossy chocolate coating.
- Coat Clusters: Remove the frozen yogurt clusters from the freezer. Dip each cluster into the melted chocolate to coat thoroughly. Return the dipped clusters to the freezer for a few minutes to allow the chocolate to set completely.
- Serve and Store: Enjoy the clusters cold straight from the freezer. Store any leftovers in a covered container in the freezer where they will keep fresh for up to three months.
