Ingredients
Scale
Cheese Blend
- 1½ cups shredded mozzarella cheese
- 3 oz cream cheese, softened
- ¼ cup grated parmesan cheese
Dry Ingredients
- 1 cup + 2 Tbsp almond flour
- 1½ tsp baking powder
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Other Ingredients
- 2 large eggs, room temperature
- 3 Tbsp unsalted butter, melted
- 1 garlic clove, crushed
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
- Melt Cheese: In a microwave-safe bowl, combine shredded mozzarella and softened cream cheese. Microwave on high until melted, stirring well until smooth and fully combined.
- Mix Dough: Add the room temperature eggs to the cheese mixture and mix well. Stir in all the dry ingredients: almond flour, baking powder, onion powder, garlic powder, salt, and black pepper, until a dough forms.
- Shape Rolls: Use a large cookie scoop to portion the dough into evenly sized balls. Place them spaced evenly on the prepared baking sheet.
- Prepare Garlic Butter: In a small bowl, combine the melted butter with the crushed garlic. Brush this garlic butter generously over the tops of each roll, then sprinkle with grated parmesan cheese for extra flavor.
- Bake Rolls: Place the tray in the oven and bake the rolls for 14 to 16 minutes, or until they are golden brown and cooked through.
- Finish and Serve: Once baked, brush the rolls with any remaining garlic butter while still warm, to enhance the garlic flavor and keep them moist. Serve immediately.
Notes
- Ensure the cream cheese is softened to help with melting and mixing smoothly.
- Using room temperature eggs helps the dough combine better without cooling the cheese mixture.
- To get evenly sized rolls, use a cookie scoop for consistency in cooking time and appearance.
- For extra garlic flavor, you can add more minced garlic to the butter or sprinkle some extra garlic powder over the rolls before baking.
- These rolls are best enjoyed fresh but can be stored in an airtight container and warmed before serving.
