Description

This Spicy Queso Dip is a flavorful and creamy party favorite featuring savory pork sausage, melty cheese dip, black beans, and a kick of diced tomatoes with green chilies. Ready in just 20 minutes, it’s perfect for game days, gatherings, or any time you crave a deliciously spicy twist on classic queso served with crunchy tortilla chips.

Ingredients

Scale

Sausage

  • 1 lb pork sausage

Cheese Dip and Veggies

  • 2 (16-oz) cartons Gordo’s Cheese Dip (1 hot, 1 original)
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained

Spices

  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp chili powder
  • 1 tsp cumin

Instructions

  1. Cook the sausage: Heat a skillet over medium-high heat. Add the pork sausage and cook, crumbling it with a spoon, until it is no longer pink and thoroughly cooked through. Drain any excess fat from the skillet.
  2. Heat the queso dip: Transfer the cheese dip to a microwave-safe dish and heat it according to the package instructions, usually about 1-2 minutes until warm and melted.
  3. Combine ingredients: Stir the cooked sausage, drained black beans, undrained Rotel diced tomatoes and green chilies, onion powder, garlic powder, chili powder, and cumin into the warm queso dip until well combined.
  4. Heat everything together: Microwave the combined dip mixture for an additional 60 seconds to allow all flavors to meld and the dip to heat through completely.
  5. Serve: Transfer the spicy queso dip to a serving bowl and enjoy warm with tortilla chips for dipping.

Notes

  • Use one hot and one original Gordo’s Cheese Dip carton to balance creaminess and spiciness.
  • Drain and rinse black beans to reduce excess sodium and improve flavor.
  • For a milder dip, use mild Rotel tomatoes or reduce chili powder.
  • Can be kept warm in a slow cooker on low for parties.
  • Great for dipping with tortilla chips, crackers, or fresh vegetable sticks.
