Ingredients
Scale
Sausage
- 1 lb pork sausage
Cheese Dip and Veggies
- 2 (16-oz) cartons Gordo’s Cheese Dip (1 hot, 1 original)
- 1 (15-oz) can black beans, drained and rinsed
- 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
Spices
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp chili powder
- 1 tsp cumin
Instructions
- Cook the sausage: Heat a skillet over medium-high heat. Add the pork sausage and cook, crumbling it with a spoon, until it is no longer pink and thoroughly cooked through. Drain any excess fat from the skillet.
- Heat the queso dip: Transfer the cheese dip to a microwave-safe dish and heat it according to the package instructions, usually about 1-2 minutes until warm and melted.
- Combine ingredients: Stir the cooked sausage, drained black beans, undrained Rotel diced tomatoes and green chilies, onion powder, garlic powder, chili powder, and cumin into the warm queso dip until well combined.
- Heat everything together: Microwave the combined dip mixture for an additional 60 seconds to allow all flavors to meld and the dip to heat through completely.
- Serve: Transfer the spicy queso dip to a serving bowl and enjoy warm with tortilla chips for dipping.
Notes
- Use one hot and one original Gordo’s Cheese Dip carton to balance creaminess and spiciness.
- Drain and rinse black beans to reduce excess sodium and improve flavor.
- For a milder dip, use mild Rotel tomatoes or reduce chili powder.
- Can be kept warm in a slow cooker on low for parties.
- Great for dipping with tortilla chips, crackers, or fresh vegetable sticks.
