Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Sauté Vegetables: Heat 2 tablespoons of sesame oil in a large ovenproof skillet over medium heat. Add the broccoli florets, diced red bell pepper, and sliced scallions. Cook and stir for 3 to 5 minutes until the vegetables are softened but still vibrant.
  3. Prepare Sauce: In a measuring cup, whisk together the low-sodium teriyaki sauce, water, cornstarch, and grated garlic until smooth and combined.
  4. Add Sauce to Vegetables: Pour the prepared teriyaki sauce mixture into the skillet with the vegetables. Stir well to coat everything evenly and allow the sauce to begin thickening slightly.
  5. Combine Chicken and Rice: Add the sliced cooked chicken and cooked brown rice into the skillet. Mix everything thoroughly so the sauce, chicken, rice, and vegetables are evenly distributed.
