Description

Tropical Pineapple Chicken & Rice Delight is a vibrant and flavorful island-inspired meal combining tender chicken breasts with sweet pineapple chunks, aromatic ginger, and garlic, all served atop perfectly cooked rice. This easy-to-make dish blends savory and sweet elements for a tropical taste sensation in just 35 minutes.

Ingredients

Scale

Chicken & Marinade

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Rice

  • 1 cup rice (white or brown)

Sauce & Vegetables

  • 1 1/2 cups pineapple chunks (fresh or canned)
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
  • 1/2 red bell pepper, diced
  • 1/4 cup chopped green onions
  • 1/4 cup cilantro (optional, for garnish)

Instructions

  1. Cook the rice: Prepare the rice according to the package instructions. Once cooked, set it aside to keep warm.
  2. Cook the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook the chicken for about 6-8 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  3. Sauté aromatics and vegetables: In the same skillet, add minced garlic, grated ginger, and diced red bell pepper. Sauté for 2-3 minutes until fragrant and the bell pepper begins to soften.
  4. Make the pineapple sauce: Add the pineapple chunks, soy sauce, honey, and chicken broth to the skillet. Bring the mixture to a simmer and cook for about 5 minutes to allow the sauce to reduce slightly and meld the flavors.
  5. Add chicken back to skillet: Slice the cooked chicken breasts into strips and return them to the skillet. Stir everything together to coat the chicken evenly with the pineapple sauce.
  6. Serve the dish: Spoon the chicken and pineapple mixture over the cooked rice. Garnish with chopped green onions and cilantro if desired, then serve immediately.

Notes

  • You can use either white or brown rice depending on your preference.
  • Fresh pineapple gives the best flavor, but canned pineapple chunks work well too.
  • Adjust the honey and soy sauce amounts to taste for a sweeter or saltier flavor profile.
  • For added heat, consider adding a pinch of red chili flakes during the sauté step.
  • This dish reheats well and can be stored in the refrigerator for up to 3 days.
