  • 1 cup Heavy Cream
  • 3 large Egg Yolks
  • 2 medium Shallots
  • ½ cup grated Parmesan Cheese
  • 1 tbsp Fresh Herbs (Thyme, Parsley)
  • Salt and Pepper To taste
  • 1 tsp Lemon Zest

  • Preheat the Oven: Preheat your oven to 325°F (160°C). A lower baking temperature is essential to ensure that the custard cooks evenly and doesn’t curdle.
  • Prepare a Water Bath: To avoid overheating the brulee and to achieve a smooth texture, place the ramekins in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins. This water bath method ensures even cooking by providing gentle, indirect heat.
  • Prepare the Crab Brulee: Gently pour the crab mixture into individual ramekins, filling each about three-quarters full. Then, place the ramekins in the oven and bake for 25-30 minutes. The brulee is done when the custard is set but still slightly jiggly in the center. Keep an eye on it to avoid overcooking, which could cause the custard to separate.
  • Cool Down: After baking, remove the ramekins from the water bath and let them cool for a few minutes. Then, refrigerate the crab brulee recipe for at least two hours (or overnight) to allow the custard to set completely.
