Ingredients
  

  • 1 cup Cottage cheese
  • cups All-purpose flour
  • 1 tsp Baking powder
  • ½ tsp Salt
  • 1 tbsp Olive oil (for dough)
  • 2-3 tbsp Water (as needed)

Instructions
 

  • Blend wet ingredients: In a blender or food processor, blend cottage cheese and egg until smooth.
  • Mix the dough: Pour the mixture into a bowl. Stir in oat flour, baking powder, and salt until combined. Let it sit for 2–3 minutes to thicken.
  • Cook the flatbread: Heat olive oil in a non-stick skillet over medium heat. Pour half of the batter and spread into a round flatbread shape. Cook 2–3 minutes per side until golden and cooked through. Repeat with remaining batter.

Notes

  • Store leftovers in the fridge for up to 3 days — reheat in a dry skillet.
  • Great as a base for mini pizzas, breakfast wraps, or dipping in hummus.
  • Make it dairy-free by using dairy-free cottage cheese and a flax egg.
