Ingredients
  

  • 6 rice paper sheets
  • ½ cup cooked shrimp sliced in half lengthwise
  • 1 cup vermicelli noodles cooked
  • ½ cup shredded lettuce or mixed greens
  • ¼ cup julienned carrots
  • ¼ cup fresh mint whole leaves
  • dipping sauce like hoisin or peanut sauce

Instructions
 

  • Soak each rice paper sheet in warm water for 5–10 seconds until soft.
  • Place fillings in the center and roll tightly.
  • Serve immediately with your favorite dipping sauce.
