Equipment

  • 1 Medium saucepan For cooking the sauce
  • 1 Large pot For boiling pasta
  • 1 Colander For draining pasta
  • 1 Wooden spoon For stirring
  • 1 Grater For fresh Parmesan

Ingredients

  • 2 cups Ditalini pasta The base of the dish
  • 2 tbsp Olive oil Adds richness and depth of flavor
  • 3 cloves Garlic (minced) Aromatic base
  • ½ cup Parmesan cheese Adds creaminess and a savory finish
  • ¼ cup Fresh basil Adds freshness and a burst of flavor
  • 4 cups Chicken or vegetable broth The flavorful base for the soup
  • Salt and pepper To taste Essential seasonings

Instructions

  • Cook the Ditalini Pasta : Start by boiling a large pot of salted water. When the water starts boiling, add the Ditalini pasta and cook for 7-9 minutes, or until it reaches an al dente texture. The pasta should be firm to the bite, as it will continue cooking once added to the broth. Drain the pasta and set it aside.
  • Sauté the Aromatics : In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until it becomes fragrant. Be cautious not to burn the garlic, as it can become bitter if overcooked.
  • Add the Broth : Pour the chicken or vegetable broth into the pot, bringing it to a simmer. Let the broth cook for about 5 minutes, allowing the garlic and olive oil to infuse the liquid with flavor. Taste the broth and add salt and pepper as needed.
  • Combine Pasta and Broth : Add the cooked Ditalini pasta to the simmering broth. Stir well to combine, letting the pasta absorb the rich flavors of the broth. Simmer for an additional 2-3 minutes.
  • Finish with Parmesan and Fresh Herbs : Stir in the Parmesan cheese and freshly chopped basil. The cheese will melt into the soup, creating a creamy texture that complements the small pasta. Serve hot, garnished with additional basil or Parmesan if desired.

Notes

  • Add white beans or sautéed spinach for extra nutrition.
  • For a creamy twist, stir in a tablespoon of heavy cream or ricotta before serving.
  • This dish pairs beautifully with garlic bread or a simple green salad.
