1 Double boiler Or heatproof bowl over saucepan
1 Silicone chocolate mold Or small parchment-lined pan
1 Spatula For mixing and pouring
- 200 g Dark chocolate
- 100 g Milk chocolate
- 50 g Almonds (or other nuts)
- 50 g Dried fruits (dates or apricots)
- Sea salt A pinch
Use a Double Boiler: Fill a pot with a couple of inches of water and place a heat-safe bowl on top, ensuring it doesn’t touch the water. This low heat will melt the chocolate without causing it to burn.
Chop the Chocolate: Cut both dark and milk chocolate into small, even pieces for quicker melting.
Monitor the Temperature: Stir the chocolate frequently as it melts. Avoid overheating, as this can cause the chocolate to seize up. Ideally, you want the temperature to be around 45°C (113°F).
-
Use white or milk chocolate for variation, though dark chocolate best complements the floral and spice notes.
-
Store in an airtight container in a cool place for up to 2 weeks.
-
Great as an edible gift wrapped in gold foil or small boxes.
