- ½ cups All-purpose flour
- ¼ cup sugar For the crust
- ⅓ cup butter Cut into small cubes, chilled
- ¼ cup Ice-cold water To bring the dough together
- 2 cups Fresh cherries Pitted and halved
- ¼ cup Granulated sugar For the filling
- 1 tbsp Cornstarch To thicken the cherry filling
- 1 tsp Lemon juice To enhance the cherry flavor
- 1 tsp Vanilla extract Optional, for added flavor
- 1 Egg wash For brushing on the crust before baking
Prepare the Tart Crust:Preheat your oven to 350°F (175°C).In a food processor, combine the flour, powdered sugar, and cubed butter. Pulse until the mixture resembles coarse crumbs.Add the egg yolk and pulse until the dough begins to come together. If needed, add cold water, 1 tablespoon at a time, to help it form.Turn the dough onto a floured surface and knead it gently to bring it together. Press it into a disk, wrap in plastic, and refrigerate for about 30 minutes. Shape the Tart:Roll the dough out into a circle, about 1/8-inch thick, and transfer it to a tart pan. Press the dough into the edges and trim any excess.Line the dough with parchment paper, and fill with pie weights or dried beans. Bake for 10-12 minutes, then remove the paper and weights and bake for an additional 5-7 minutes, or until the crust is golden brown.Let the tart shell cool completely. Make the Cherry Filling:In a saucepan over medium heat, combine the cherries, granulated sugar, and lemon juice. Stir occasionally until the cherries release their juices. If you'd like a thicker filling, dissolve the cornstarch in a bit of cold water and stir it into the cherry mixture. Let it simmer for about 5-7 minutes until the sauce thickens and becomes syrupy.Remove from heat and let cool completely. Make the Cream Filling:In a medium bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.If you prefer a richer cream filling, mix in the cream cheese until smooth and well-combined. Assemble the Tart:Spread the cream filling evenly into the cooled tart crust.Spoon the cherry filling over the cream, spreading it out evenly. If desired, garnish with additional fresh cherries or mint leaves. Serve:Refrigerate the tart for at least 1 hour before serving to let the flavors meld and the filling set.Slice and enjoy this sweet, tangy, and creamy dessert!
