Equipment

  • 1 Skillet Cast iron or nonstick preferred
  • 1 Wooden spoon For stirring
  • 1 Cutting board
  • 1 Chef’s knife

Ingredients
  

  • 1 lb ground lamb Fresh or thawed
  • 1 tbsp olive oil Extra virgin preferred
  • 1 small onion Finely chopped
  • 2 cloves garlic Minced
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp ground coriander Optional
  • ¾ tsp salt Or to taste
  • ¼ tsp black pepper Freshly ground
  • 2 tbsp chopped parsley Fresh
  • 1 tbsp lemon juice Freshly squeezed (optional)

Instructions
 

  • Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook for 2–3 minutes until softened. Add garlic and sauté for 30 seconds until fragrant.
  • Cook the Lamb: Add ground lamb to the skillet. Break it apart with a wooden spoon and cook until browned and no longer pink, about 7–9 minutes.
  • Season & Finish: Stir in cumin, paprika, coriander, salt, and pepper. Cook for another 2 minutes, then turn off the heat. Stir in chopped parsley and lemon juice if using. Serve hot.

Notes

  • This lamb mixture works great in pita bread with tzatziki, over couscous, or tossed with roasted vegetables.
  • You can adjust spices to taste—try cinnamon or chili flakes for a twist.
  • Store leftovers in the fridge for up to 3 days.
