Ingredients
  

  • 8 oz lean ground beef (90% lean or turkey optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 1 cup chopped romaine lettuce
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • ¼ cup pickles sliced
  • ¼ cup shredded cheddar cheese or dairy-free alternative
  • 2 tbsp plain Greek yogurt for the sauce (or mayo)
  • 1 tbsp ketchup
  • 1 tsp mustard

Instructions
 

  • Cook the beef: Heat a skillet over medium heat. Add the ground beef, salt, pepper, and garlic powder. Cook until browned and fully cooked (about 8–10 minutes). Drain excess fat if needed.
  • Make the sauce: In a small bowl, mix Greek yogurt, ketchup, and mustard until smooth. Adjust taste as desired.
  • Assemble the bowls: Divide the romaine lettuce into two serving bowls. Top with cherry tomatoes, onions, pickles, cheese, and cooked beef. Drizzle with sauce and serve immediately.

Notes

  • For extra fiber and volume, add shredded carrots or cucumbers.
  • Swap beef for turkey, veggie crumbles, or tofu for a leaner or plant-based version.
  • Use sugar-free ketchup to keep it low-carb.
