  • 1 bell pepper diced
  • 2 celery stalks diced
  • 4 garlic cloves minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp cayenne pepper (optional, adjust to taste)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 bay leaves
  • 1 cups chicken broth
  • 1 lb penne pasta (or any other short pasta)
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped (for garnish)
  • 1-2 green onions chopped (for garnish)

Instructions
 

  • Cook the meats: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage slices and chicken pieces. Cook until the chicken is browned and the sausage is slightly crispy, about 8-10 minutes. Remove the meat from the pot and set aside.
  • Sauté the vegetables: In the same pot, add the onion, bell pepper, celery, and garlic. Cook for about 5 minutes until the vegetables are softened.
  • Add seasonings: Stir in the diced tomatoes, tomato paste, paprika, cayenne pepper, thyme, oregano, and bay leaves. Cook for another 2 minutes to allow the spices to bloom.
  • Add broth and pasta: Pour in the chicken broth and bring to a boil. Once boiling, add the pasta, stirring to combine. Reduce the heat to low, cover the pot, and let it simmer for about 12-15 minutes, or until the pasta is tender and most of the liquid is absorbed.
