Cook the meats: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage slices and chicken pieces. Cook until the chicken is browned and the sausage is slightly crispy, about 8-10 minutes. Remove the meat from the pot and set aside.
Sauté the vegetables: In the same pot, add the onion, bell pepper, celery, and garlic. Cook for about 5 minutes until the vegetables are softened.
Add seasonings: Stir in the diced tomatoes, tomato paste, paprika, cayenne pepper, thyme, oregano, and bay leaves. Cook for another 2 minutes to allow the spices to bloom.
Add broth and pasta: Pour in the chicken broth and bring to a boil. Once boiling, add the pasta, stirring to combine. Reduce the heat to low, cover the pot, and let it simmer for about 12-15 minutes, or until the pasta is tender and most of the liquid is absorbed.
Return the meat: Add the cooked sausage and chicken back into the pot, stirring to combine. Cook for another 5 minutes, allowing everything to meld together.
Season to taste: Add salt and pepper to taste, adjusting the seasoning as needed.
Garnish and serve: Garnish with fresh parsley and chopped green onions. Serve hot and enjoy your delicious pastalaya!
